Shrimp flowers with artichoke sauce

Ingredients
Appetizer For 4 people
1 225 g jar of artichoke hearts in oil
1 shallot
1 lime
2 tablespoons of olive oil
4 tablespoons of crème fraîche
0.5 dl of water
50 g of spinach for a salad
salt and dried flowers, for example, Salt & Flower Mix
250 g of fresh pasta stuffed with Shrimp Flowers
2 sprigs of thyme

How to proceed
Preparation: approx. 20 minutes
Drain the artichoke hearts and let them drain. Chop the shallot. Halve the lime, then cut one half into slices and squeeze the other. Sauté the shallot and the artichoke hearts in the oil. Add the crème fraîche, water, lime juice, spinach and bring to a boil. Season with a pinch of flower salt. Boil the pasta in salted water for 3–4 minutes. Drain, drain and season the flowers with the sauce. Puff the thyme and garnish the stuffed pasta with thyme leaves and lemon slices.
